Serving locally sourced fried chicken, scratch-made biscuits and classic beignets in a welcoming fast-casual setting, chefs Elise Landry and Adam Wagner opened Gold Standard in 2026. Gold Standard blends culinary tradition with responsible sourcing to create exceptional, approachable, classic comfort food.

Can I order ahead either online or over the phone?

Not yet. Since we opened our doors, we have been operating at very near max capacity all hours that we're open. We're very grateful for that! But we do have a limit to how much food we can put out of our kitchen. THE GOOD NEWS: Our average ticket time is about 15 minutes. Obviously, that varies with the level of business at any given moment, but we're generally pretty darn quick!

Can you accommodate dietary restrictions?

We do our best to accommodate a wide range of dietary needs—some are easier than others. Please let us know your specific restrictions when ordering, and we’ll walk you through the best options available.

Do you have dairy-free options?

Yes, we do offer some dairy-free options. That said, our biscuits and fried chicken contain butter and buttermilk. We’re continuing to expand our menu to better accommodate a variety of dietary needs.

Do you have gluten-free options?

Yes! We offer several gluten-free options, including sandwiches with GF buns, salads, and GF cookies/pastries. We also have a fried chicken option made with gluten-free flour. However, we use a significant amount of wheat flour in our kitchen and cannot guarantee that any items are safe for those with celiac disease.

Do you offer catering?

Not yet—but it’s something we’re actively working on. We hope to offer catering for events, meetings, and special occasions in the near future.

Do you take reservations?

Not at this time—we are currently walk-in only.

Is Gold Standard kid-friendly?

Absolutely! While we don’t have a dedicated kids’ menu, our chicken, sandwiches, biscuits, sides, and cookies offer plenty of options for kids.

What do you fry your chicken in?

Canola oil.

Where can we park?

We don’t have a dedicated parking lot, but there are several city and private parking options within a two-block radius.

Gold Standard Eats is owned and operated by husband and wife team, Elise Landry & Adam Wagner.
Elise was born and raised in Kansas City with an upbringing celebrating her Cajun heritage.  Elise has composed a cooking style that focuses on her love for seasonality and sustainability within our food systems. The lush ecosystems of Western Washington drew Elise in immediately, and Olympia is where she has decided to put down roots.

Born in Northeast Nebraska, Adam has lived in Kansas City, Puerto Rico, New Orleans, and Alaska. With various occupations throughout his life as an engineer, musician and even as a kayak guide, one industry has consistently recaptured his interest: restaurants and hospitality. After owning and operating Chicory until 2026, Adam is ready to bring fried chicken to the people of Olympia.
